Gcc Internals Doc at gcc.gnu.org. Read this thrice; it is necessary but not sufficient. I have some additional comments.

The gcc.gnu.org site also has an easy-to-miss Readings page worth checking out.
The Institute of Information and Technology Bombay runs a regular summer program teaching gcc internals and has a number of helpful papers and powerpoint slidesets online at their Gcc Resource Center such as The Conceptual Structure of GCC, Gcc 4.0.2 — The Implementation, Writing GCC Machine Descriptions and Gcc Internals Course slideset. Their Advanced Issues in Machine Descriptions comments "The machine descriptions are difficult to construct, understand, maintain and enhance … Gcc has become a hacker's paradise".
A Maintainance Programmer's View of GCC (2003, Zachary Weinberg, CodeSourcery) is valuable.
